Bethenny Frankel has a great video on how to prepare “Brown Rice Breakfast”. It reminds me of rice pudding, but a bit healthier. Whole grain rice can be hard to cook because it takes longer to cook than white rice. I cook mine in the rice cooker and it comes out nice and soft. Alton Brown, on Food Network, has a great recipe for cooking brown rice in the oven. That version takes about an hour and also comes out nice and soft.
Try this recipe for a great snack or a healthy breakfast. It would be a nice alternative to oatmeal if your family is tired of eating it. Have it along with some fruit and this would be a quick and healthy breakfast.
