Whole Wheat Buttermilk Biscuits
2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup butter (1 stick)
1/4 teaspoon baking soda
3/4 cup buttermilk
Preheat oven to 450 degrees. Stir together in a bowl the flour, baking powder, cream of tartar, salt and baking soda. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center and add the buttermilk. Stir with a fork just until a soft dough forms that pull away from the sides of the bowl.
On a lightly floured surface, knead the dough gently about 10 or 12 strokes. Roll or pat the dough to 1/23 thickness. Press out biscuits with a biscuit cutter or glass dipped in flour between cuts.
Bake on a baking sheet in a 450 degree oven for 10-12 minutes or until golden brown. Serve warm with honey or you favorite fruit preserve. Makes 10 biscuits.
Banana Blueberry Smoothie
Blend together:
1/2 cup orange or apple juice
1/2 cup low-fat vanilla yogurt
1 frozen banana
1/2 cup frozen blueberries
1 teaspoon vanilla extract
Smoothies are so much fun to make! Your kids will love to help you whip up this delicious yet nutrious beverage. Frozen fruit will make your smoothie thicker but if you have only fresh fruit available you will need to blend your smoothie with some crushed ice for added thickness. The great thing about smoothies is you can add in whatever you like. You can use milk instead of juice, add in protein powder and try different fruits and berries.
Whole-Wheat Oatmeal Pecan and Raisin Cookies
1 cup butter (2 sticks)
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon baking soda
1/2 teaspon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 1/2 cup whole wheat flour
2 cups oatmeal
1 cup raisins
1 cup chopped pecans
Cream the butter, sugar and brown sugar until light and fluffy. Add in the eggs. Stir in the flour, baking soda, salt and cinnamon. Next add in oatmeal, nuts, raisins and vanilla extract. Drop by rounded teaspoons onto an ungreased cookie sheet. Bake in a preheated 350 degree oven for 10-12 minutes or until lightly browned. Cool on wire rack. Makes about 6 dozen.
